The soft nougat was a sweet of the Venetians that came to Corfu during the Venetian Era since it was the favourite dessert of the aristocracy. The name “Mantolato“ comes from the Italian word mandorla (that means almond) and besides almonds it contains a lot of honey, a little sugar and egg whites’ meringue.
