Fill a large pan with salted water, place on high heat and bring to boil.
Ádd the pasta to the boiling water and cook for 10 to 12 minutes.
Meanwhile, heat the olive oil in a frying pan, then add the noumboulo and the mushrooms. Cook over a medium-high heat for about 5 minutes.
Add chopped garlic and onion. Sauté for about 5 minutes.
Season to taste with salt and pepper.
Pour in the wine, cover and simmer for about 10 minutes then add butter.
Drain the pasta and return it to the pan add sauce and stir well.
Serve with grated cheese sprinkled on top.
*Noumboulo is a pork fillet marinated in wine, seasoned with peppers and oregano and smoked in aromatic plants (laurel, sage, schin, mallow, etc.). Suggest to cut it into thin strips because of intense taste.
*Taste it before adding salt, pepper and spices.
